Kkak doo ki (Diced radish kimchi)

  1 mu (radish) or 3 Lb

  1 cup go choo ga roo (Korean chili powder)

  4 green onions, cut in a bias

  1/2 onion, slice thinly

  2 heads minced garlic

  1 piece ginger (1/4 inch thick), fine chop

  2 tablespoons sae woo jeot (salted shrimp),chopped

      or same amount of fish sauce

  1/4 cup salt

  2 teaspoons sugar

  1 teaspoon sesame seeds

Wash and peel radish. Cut into 1 inch cube.

In a large bowl, add radish and pour go choo ga roo, mix well.
Add garlic, ginger, salt, sae woo jeot, sugar and sesame seeds, mix with hands.
Put green onions and onion, mix slightly.

Transfer in a air tight container.
Leave on a kitchen counter for over night or a day then to refrigerator.
