Kam ja jeon (Potato pancake)

 

   3 potatoes

  juice of 1/2 onion

  2 green onions, chopped

  carrot, thin julienne

  1 tbsp salt

Use ginger grater, grate potatoes to a paste. Add onion juice immediately. To this add salt, green onions and carrot and mix well.
In a non-stick pan, make 2-3 inches in diameter pancake.

Potatoes turn brown very quickly. So when you grate potatoes, add onion juice from the start. This way, you can get the pretty pale yellow pancakes at the end.
Make a pancake 1/3 inch thick.
